This recipe is so easy, delicious, and all-around awesome that I’ve been making it pretty much every weeknight for the past two weeks. Fresh, filling, cheesy, and a little spicy – it’s the perfect pick-me-up after a long day’s work.

Veggie Tacos

I made up this recipe while I was lying in shavasana after a hot yoga class. I really should have been meditating but was instead thinking of how I could throw together a healthy and delicious but super-fast dinner that would satisfy my craving for refried beans.
