Chia Seed Pudding with Coconut Milk and Vanilla Bean

Easy coconut chia seed pudding. Vegan and gluten-free! Prepare the night before and have a delicious breakfast that’s ready to go.

Mix all ingredients except the fruit / berries together in a bowl or sauce pan.

Make sure the ingredients are thoroughly interspersed – you may want to whisk them together until smooth.

Cover with tin foil and refrigerate overnight.

In the morning, transfer the pudding to a bowl that's at room temperature.

Top with cut-up fresh fruit or berries.
